If you have the luxury of being able to whip-up some pancakes for breakfast on Tuesday, these gluten free Buckwheat Pancakes are simply delicious! Serve with raspberries and blueberries (or whatever berries you may have in your fridge) with a drizzle of maple syrup. I also substituted the butter with olive oil to cook the pancakes with.
Pancakes without eggs, dairy or gluten - we had to try them! These Vegan Blueberry Quinoa Pancakes didn't disappoint. Beautifully fluffy (thanks to the coconut flour) we could eat the whole batch!
The recipe most of us are used to on Pancake Day, is still up there as one of our favourites and it has the ease factor. Flour, eggs, milk, lemon and sugar are basically the only ingredients you need. This particular recipe is one of Delia Smith's and creates about 12 small pancakes. If you like them bigger, expect the recipe to stretch to about 8.
The Adults Only
One for the grown-ups, when those little ones are safely tucked-up in bed and with a serious 'overindulgence' tag included, these Baileys Chocolate Chip pancakes are a truly decadent dessert. Make sure to not fill-up on any savoury meal beforehand so you have lots of room for these beauts.
Ticking all three boxes of being healthy, tasty and easy, this Banana Pancake recipe is one for the whole family, requiring only 3 ingredients! A little tip, if your bananas haven't yet reached peak ripeness, you can easily help them along by sticking them in the oven for a few minutes until the skin turns brown. Enjoy.
